Description
The edible olive has the official name Olea Europea Ceraticarpa and is PDO (Protected Designation of Origin). The harvest takes place in November-December by hand. Then, a traditional debittering recipe is followed, during which the olives are placed in brine, organic olive oil, and special organic red wine vinegar. In 5 months they are ready to be carefully packaged in glass jars.
