Activation of the seed exactly as applied in the production process of the Unheated Raw Tahini SAMYTHOS.
The sesame seed is heated to 65°C and the sesame paste is worked at a moderate thermal load (40-42°C) to retain 65 to 70% of the vitamins present in our unheated raw tahini.
The machines used during the seed processing are of our own design and unique, aiming to maintain continuous control of the organoleptic and nutritional elements of the sesame mass throughout its entire volume.
Due to the above, on one hand, the seed retains a large part of its relative moisture, and on the other hand, we have the minimal possible burden on its oil. This process results in a tahini with high fluidity, full flavor, and the aromas of roasted sesame with notes of pistachio and hazelnut dominating its aftertaste.
