Organic whole grain spelt pasta from the preserved unimproved local variety of the farm "Triticum dicoccum Dilofos". Whole grain spelt pasta has been proven to have the highest polyphenol content, which is retained even after baking. Polyphenols are a category of antioxidants that neutralize free radicals and protect the body from cardiovascular diseases and cancer. With a content exceeding 1 gram of phenols per kilogram (pharmaceutical product dose level), the traditional cereal varieties of the Antonopoulos Farm have been shown to contain up to three times the amount of phenols compared to similar cereals from Europe, America, and Asia.
