Description
Kasseri Proikas is an aged exceptional cheese with Protected Designation of Origin (P.D.O.). It is produced at the Proikas dairy in Sochos, Thessaloniki, exclusively from selected Greek sheep and goat milk, from indigenous breeds of free-range sheep and goats in the area, without additives or preservatives. Using the traditional family recipe, it matures for more than 12 months under special conditions. A unique cheese with an intense, rich, particularly aromatic flavor and a characteristic aftertaste that maintains a pleasant sense of fullness for a long time. International award at the World Cheese Award in the United Kingdom. It is consumed as a table cheese, after being left out of the refrigerator for half an hour to bring out its concentrated aromas. It pairs excellently with a glass of wine, fruits, and nuts. It can also be used as an ingredient in pies, peinirli, soufflés, gratins, and pastitsio.
