Description
Gorgonzola is one of the most popular and widely accepted cheeses in the world. A global ambassador of Made in Italy, its blue-green vein immediately recalls the plains and pastures of the Piedmont and Lombardy regions. The first Gorgonzola ever produced dates back to the late 9th century in a small village near Milan called Gorgonzola, hence the name. It is made from cow's milk, and the cows live a healthy life and are fed only with natural feed completely free of growth hormones (rBGH). All the milk, which, as produced according to the special procedures indicated by IGOR, is of the highest quality, is delivered fresh daily to the milk receiving department of the factory. Upon delivery, milk samples undergo strict controls in the laboratory unit to determine the hygienic quality of the milk according to clearly defined chemical, microbiological, and organoleptic parameters. Then, the fresh milk is stored in vertical insulated silos (tanks) equipped with a constant temperature control system.
